Hey Foodies… Yes it’s March and I seem to have missed my new monthly deadline by one day. My bad. But all is not lost because I have something super delicious up my sleeve (as usual). With that being said: who’s ready for Spring??? I know I am. Last month on the East coast was brutally frigid. Arctic even, and I’m so ready for warmer weather to start making it’s way here. Come on Spring!
Culinarily speaking, I’ve already got my sights set on all the fresh seasonal produce that will be coming in with the change of the season… artichokes, arugula, ramps, zucchini, asparagus and other green goodies! I know through the advent of modern technology we are able to get these foods virtually anytime we want, but I really am a fan of eating seasonally. (Except for when a craving hits, then all bets are off!) But I digress… I’ve already started going over foods in my head (in between songs that is) and its all quite delicious up there and I can’t wait to share. All in due time my foodies.
Anywho, in honor of Spring being on it way, I’ve decided to give you something green, rich, creamy, savory (with a little kick) and uber good for you! Can you guess what it is??? Well you don’t really have to guess since there’s a hug picture at the header of this post, lol. Say hello, Guacamole!!! Oh yes kids. One of my all time faves! So yummy and just great anytime. Eat it alone, as a snack or dip; put it on toast or a sandwich to give some extra depth and flavor. I just love it. Funny thing is though, I hated avocado as a kid growing up. My parents (“hey mom & dad!”) are from the islands, Jamaica to be exact, and so they grew up eating this tasty, creamy, delicious fruit (yes, its technically a fruit) with almost every other meal. I just couldn’t understand it. Until one day in college when I had some mind blowing guac at a Mexican restaurant with some friends. The rest, they say, is history!
I really hope you love it as much as I do. Rich, fun, flavorful and full of good fats among other things, it’s my go to condiment of choice (next to Sriracha that is.. I freaking love that stuff!). I tend to keep a couple ripe avocados handy at any given time in my household, and I highly recommend you do the same. They’re great to eat as is, but that guac though… it’s killer stuff! Enjoy.
- 1 ripened avocado (cubed)
- 1 clove garlic (finely minced)
- 1/4 of medium yellow, red or white onion (finely chopped)
- pinch of cumin
- few sprigs fresh cilantro
- squeeze of lime
- 1/4 cup chopped fresh tomatoes (any color will do)
- salt & pepper to taste
- pinch of cayenne pepper
In a medium mixing bowl add all ingredients and gently mash until blended.*
* Depending upon desired chunkiness, guacamole can be mashed further for more smoothness.
